Good morning friends, and happy almost Friday!! 
It made me so happy to read your comments last week letting me know how much y’all have been enjoying my recipe posts. And I also love it when you guys send messages letting me know you made one of the dishes and love it, so keep em coming 🙂 
Over the past year, I have really found my love for cooking. I love finding healthy meals that also taste good, and that I can get my entire family to eat. Carson is still my work in progress when it comes to eating everything I cook, but in his defense, I wouldn’t have touched a lot of it either as a kid…ha! Taylor, on the other hand, will eat almost anything! And I’m finding that the more I let her “help” with dinner, the more willing she is to eat it. The spiralizer has become her favorite thing, which is why you may see a lot of zoodle dishes around here 🙂 
This recipe is super healthy, but it’s packed with flavor. The peanut sauce is so yummy, and I highly recommend making a little extra to save for later. It refrigerates well and is awesome to use as a healthy dipping sauce or dressing. 


Ingredients 

  • 2-1/2 Tablespoons extra virgin olive oil, divided
  • 2 chicken breasts (14oz,) cut into bite-sized pieces
  • salt and pepper
  • 2 medium sweet potatoes, peeled then spiralized using thinnest blade, noodles slightly trimmed
  • 2 cups (4oz) broccoli florets
  • 1/4 cup water
  • Toppings: chopped peanuts, green onions, chopped cilantro

Thai Peanut Sauce 

  • 2 Tablespoons peanut butter
  • 3 Tablespoons gluten-free chicken broth
  • 1-1/2 Tablespoons low-sodium gluten-free Tamari or soy sauce
  • 1/2 Tablespoon rice vinegar
  • 1 teaspoon gluten-free chili garlic sauce (or more)
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ground ginger
  • 1 clove garlic, minced

Directions

  1. Whisk together Thai peanut sauce ingredients then set aside.
  2. Add 1/2 Tablespoon oil to a large, 12″ skillet over medium-high heat. Add chicken then season with salt and pepper and saute until cooked through. Remove chicken to a plate then set aside.
  3. Turn heat down to a little above medium then add remaining 2 Tablespoons oil. Add sweet potato noodles and broccoli, season with salt and pepper, then saute for 5 minutes, stirring occasionally. Add water then saute until noodles are al dente, another 3-5 minutes (if you like a softer sweet potato continue cooking but know that the noodles will break up a bit.) Add chicken back into the skillet along with the Thai peanut sauce then toss until the noodles are well coated and everything is heated through. Scoop into bowls then serve with toppings.

Dress runs tts, and for reference, I’m wearing the xs. Perfect fall staple that will look great layered and it also comes in six colors! 

These jeans are my FAVORITE!! They are the exact jeans you’ve seen me wearing here, here, and here but in the darker wash! As far as sizing goes, they do run on the bigger side and they stretch out a little. For reference, I’m wearing the size 2. Tee also runs tts and I’m wearing the small. I usually go up in the fitted tees because I don’t like mine too tight.

This baby doll dress is so comfy, and could easily be dressed up or down. I also love that it has a slip underneath so you can’t see through it at all! For sizing reference, it runs big so go down at least one size. I’m wearing it in the xs and had plenty of room. 

Last, but not least, is this adorable cozy sweater!! Y’all, I die over these sleeves…they are so cute!! And this sweater is super soft and not itchy at all. It runs tts, and for reference, I’m wearing the xs.
