I have to admit that I’ve been in a total cooking rut. I see all sorts of recipes that look delicious on Pinterest, but most of them I see have a lot of ingredients or they take a lot of prep time and by the time dinner rolls around, I’m just not up for all that cooking or prepping these days…especially with homework and getting the kids on their back to school bedtime routine. I have to assume there are probably many of you that feel the same way so I found a few recipes that not only look delicious, but have minimal ingredients and are easy to prep / cook.
I am not sure I could get Carson on board with eating the broccoli, but I could just have him pick it out if he didn’t want it. For a side, I just toast some rolls or a baguette, and sprinkle a little of this garlic spread on top. If you’ve never used this stuff order it now because it’s good on almost everything!
My kids have been all about bbq chicken lately, but grilling every time is getting a little boring so I figured I would switch things up this week and try out these easy bbq chicken tostadas. Plus, the kids love this rice so I figured this would be an easy side to make with it.
These one pan dishes are some of my favorites to make and the cleanup is so easy! The kids probably won’t eat the butternut squash so I just do baby potatoes instead.
I’ve made this recipe a few times and it’s one of my favorite go-to’s that I know the kids will always eat. Plus, it saves well in the refrigerator and it tastes just as good as the first time when reheated.
And last, but not least, today is the LAST day to shop the Lilly Pulitzer After Party Sale!!! I must say, this year I’ve been really impressed with the smoothness of their site (zero crashes, unlike the years past) and the merchandise has been so good. They added a ton of new arrivals yesterday evening and some of these may just be my favorite of all. At some point today they will also be adding a few more pieces so I’ll make sure to update it on here when they do!
