I am not the biggest fan of cooking big meals! I like simple, and I like my kid to eat what we are eating! So last week I shopped the house and whipped up a pretty darn good meal! Carson ate every bite which really did make this mommy so happy!!!
The Chicken is this recipe 

Ingredients:

2 cups (4 oz.) FRENCH’S® Original or Cheddar French Fried Onions
2 tbsp. all-purpose flour
4 (5 oz.) boneless skinless chicken breasts
egg, beaten

Directions:

Place French Fried Onions and flour into plastic bag. Lightly crush with hands or with rolling pin. Transfer to pie plate or waxed paper.
Dip chicken into egg; then coat with onion crumbs, pressing firmly to adhere. Place chicken on baking sheet.
Bake at 400°F for 20 min. or until no longer pink in center.

The Green beans straight out of the can with a little butter, and the secret……. a packet of splenda!  Gives them just a touch of sweetness and Carson eats them up!

The potatoes are equally as easy slice very thin, layer with butter, salt, and pepper! Cook those bad boys on 400 for about and hour mmmm taste like potato chips 😉
