I am not going to lie, as of late I am quite sick of the same old thing I cook every week. Eating clean healthy meals can sometime be a challenge, and news flash I am no gourmet cook. Plus Carson is so picky, so it makes it really hard. I have decide I have got to step outside of the usual chicken and beans or a roasted vegetable, or I am going to start to hate it. One of my favorite and go to healthy website/magazine is the Clean Eating. They have a great recipes that are filled with healthy all natural ingredients. Here are a few that look delicious, that I am planning on whipping up soon.

So sad for Oklahoma…. saying prayers for all their families and loved ones today. Just another sad reminder that life is so short, sometimes shorter than we ever think. Lord be with all of Oklahoma.

Thanks for sharing that website! I am def going to check it out. I have been trying to eat better lately and one of the things that I love to make is mashed cauliflower. Subs for mashed potatoes, without all the carbs. I steam it for 10 mins until tender, add salt while it steams for flavor. Mash it with a hand miser, add butter and a splash of milk and mis until smooth (will still have lumps). I add fresh created parm cheese to the top. My little guy eats it up. Hope that helps! 😉
