I am no gourmet cook, nor do I clam to be, but I do enjoy getting in the kitchen every now and then. 
I feel like I should have shared this recipe a long time ago. It’s by far my favorite and my number one go to! If my friends are having babies, if I am hosting supper club, or if Todd gets to request dinner this is almost always what I am making. 
My two secret ingredients:
Diced green chilies and Frontera red chile sauce. In my opinion these two things make this dish. I have only been able to find this particular sauce at Target and Harris Teeter, but it’s the best! 
Beef Enchiladas 
1lb of hamburger meat I usually get the 80% lean.
2 packets of taco seasoning (I have no preference in brand here)
8-10 soft taco shells 
2 cans of green chilies
1 bag of Frontera
1 pound bag of Mexican blend cheese (again any brand will work)

Cook the ground beef just as you would if you were making regular tacos. I know it only calls for one packet of seasoning per pound, but I think it taste better with two (you can adjust this to your liking of taco seasoning). If you use two packets of seasoning add 1/2 a cup of water, if you only use one packet add 1/4 cup of water. Pour in your chilies at the very beginning or halfway through the browning of your beef. After the beef and chilies are cooked, scoop one large spoonful into your soft shell taco and roll it up. Do this with the rest of your tacos and place them in a horizontal line. Pour the enchilada sauce over the tacos and then add cheese on top. Heat oven to 350 degrees and bake for 20-25 minutes or until cheese is melted. I usually serve this with black beans and rice, or sometimes fresh grilled corn.
