Good morning ladies…happy Wednesday! I sure hope all of you are having a great week so far. 
I am so excited to share this healthy and super delicious no-mayo chicken salad that I made last week. I’ve been on a major avocado kick lately so when I saw this recipe on Pinterest I knew I needed to make it. And you guys, it did not disappoint! It was actually so good that I ended up eating it three days in a row for lunch, but by the third day the avocado had started to turn a little brown so I just scooped the top layer off and underneath was bright green and still fresh. 
Tip – add a little more lime juice to the top after the second day and it will keep it fresh longer.

While buying all the ingredients at Harris Teeter for my chicken salad I saw this pita bread, and honestly, I didn’t have high hopes for much flavor but surprisingly it was really really good and full of flavor. 
Ingredients

  • 2½ cups cooked shredded chicken breast or 1 pound of boneless chicken, poached. (I used a rotisserie chicken)
  • 2 perfectly ripe Haas avocados, peeled and pitted
  • 1 tablespoon plus 1 teaspoon fresh lime juice (or more to taste)
  • ½ red bell pepper, seeds and ribs removed, diced
  • 3 tablespoons finely chopped white onion
  • 3 tablespoons finely chopped cilantro
  • ½ jalapeño pepper, seeds and ribs removed, finely chopped (or more, to taste)
  • 2 teaspoons finely minced garlic (2 medium cloves)
  • 1 teaspoon salt or to taste
  • ½ teaspoon fresh ground black pepper or to taste

Instructions 

  1. In a large bowl mash the avocado with the lime juice. Add the rest of the ingredients: chicken, bell pepper, onion, cilantro, jalapeño, and garlic. Season to taste with salt and pepper. Cover and store in the fridge until you’re ready to eat.
  2. It’s best to serve this the same day you make it. You can store it in the fridge overnight and It will still be delicious the next day, but it might lose some of its lovely green color.
