Last night it was our night to cook for small group, and being that I am throwing a Halloween party Friday, and Carsons class party Friday, I went for simple! These three things are so easy and so delicious! the only thing that was time consuming was the cream cheese icing, but it was so worth it, I promise!
1 package (18.25 oz.) spice cake mix
1 can (15 oz.) LIBBY’S® 100% Pure Pumpkin
3 large eggs
1/3 cup vegetable oil
1/3 cup water
Cream cheese Icing
Ingredients
2 (8 ounce) packages cream cheese, softened 1/2 cup butter, softened 2 cups sifted confectioners’ sugar 1 teaspoon vanilla extract
Directions
In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners’ sugar. Store in the refrigerator after use.
1 (14 ounce) can Rotel Tomatoes
1 (14 ounce) can black beans, drained and rinsed
1 (10 ounce) can white shoepeg corn, drained and rinsed
1 bunch green onion, chopped
This recipe is from my MIL, in a handmade cookbook she made me for Christmas 2 years ago.
1lb Ground beef rinsed and drained with a pack of taco seasoning ( I usually use 1 1/2 packs)
Re fried beans
salsa ( you can use any kind you like)
Cheese ( I use the shredded 3 cheese Mexican) I use the whole two cup bag on mine, very cheesy!!
Spread the bottom of your dish with the re fried beans then add taco meat, on top of that put your salsa, then your bag of cheese.
Put in the oven on 350* and bake for 20 minutes or until cheese is melted!
And there you have 3 easy Delicious appetizers!
