Happy Friday, loves! I hope you all have some fun weekend plans! We will be celebrating our big EIGHT year old on Saturday, and I’m so excited to meet all his new friends from school and also see our family from back home. I meant to post this earlier in the week, but life was busy and I never got around to it….better late than never, right 🙂
What I cooked //
I recently purchased the cookbook, Eat Happy, and so far I’m really enjoying it. Last week, I made the enchilada casserole, and you guys, it was so easy and so delicious!! The kids, however, wanted nothing to do with it so they got chicken nuggets, mac and cheese, and apples instead. And for those of you with picky kids, we actually had these nuggets and this macaroni.
And as far as the homemade taco seasoning, I used Danielle Walker’s, but only because I had some pre-mixed on hand.

Such a beautiful kitchen and cute outfit! Can you please clarify or do a post on whether you are gluten free with you and the kids or not? I know you had mentioned you had seen great results when you made the switch and a lot of your cooking posts are gluten free but then I will see other foods that are not–or maybe all the bakery items are gluten free ( or in this post is the Mac and cheese gluten free?). I would really appreciate the food lifestyle post and if you are 100% gluten free. Your switch was such an inspiration and you are so "real" about everything so can you please do an update post about your food lifestyle, especially with the kids as I have finicky eaters. Thanks so much!!!
